Yep. That's right:
I am writing about carrots.
Little ones, long ones, even carrots that sport colors beyond the traditional orange.
I usually eat a pound bag of them every day. (My vision is not improving.) However, without carrots I would not be able to survive this diet. They're my preferred and definitely safest late-night snack. Jenny Craig's program allows one to indulge in as many as I can each day. They are a 'free' food.
Thank goodness. I get starved late at night as I am trying to freelance my children's education through various moonlighting projects. My sanity is bundled with the humble, slender, and crunchy carrot.
Fortunately, they are very portable and easy to find in nearly every grocery store. I've munched many a bagful of the pre-washed bullet-sized carrots while on the road.
I have made a few recipes to get me through the monotony: shredded
with a non-fat/non-sugary coleslaw-styled dressing. I have also used
white wine to make a saute of diced carrots. And I've made the
occasional stir-fry with carrots.
Should anyone have any good carrot recipes, feel free to post -- please.
